Goan-style curries often achieve their depth through restraint rather than weight. In this version, hard-boiled eggs are settled into a sauce of onion, tomato, coconut milk, mustard seed, and curry leaves, giving the dish a gentle heat and a polished finish. Serve it with plain rice so the sauce remains the centre of the plate.

- 6 large eggs
- 1 tablespoon neutral oil
- 1 medium onion, finely diced
- 4 garlic cloves, minced
- 1 tablespoon finely grated ginger
- 1 green chilli, slit lengthwise
- 1 teaspoon black mustard seeds
- 8 to 10 curry leaves
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon Kashmiri chilli powder or sweet paprika
- 2 medium tomatoes, finely chopped
- 400 ml coconut milk
- 120 ml water
- 1 teaspoon tamarind concentrate or 2 teaspoons lime juice
- 1/2 teaspoon sugar
- Salt
- 2 tablespoons chopped coriander leaves
- Steamed rice, to serve
Instructions
- Place the eggs in a saucepan, cover with cold water, and bring to the boil. Remove from the heat, cover, and leave for 9 minutes. Cool under cold running water, peel, and make 2 or 3 shallow slits in each egg.
- Warm the oil in a wide sauté pan over medium heat. Add the mustard seeds and cook until they begin to pop. Add the onion and cook for 8 minutes, stirring occasionally, until softened and lightly golden.
- Add the garlic, ginger, green chilli, and curry leaves. Stir for 30 seconds, then add the coriander, turmeric, and chilli powder.
- Add the tomatoes and a good pinch of salt. Cook for 6 to 8 minutes, until the tomatoes break down and the mixture becomes thick and glossy.
- Pour in the coconut milk and water, then stir in the tamarind and sugar. Bring to a gentle simmer and cook for 8 minutes, allowing the sauce to settle and reduce slightly.
- Add the eggs, spoon the sauce over them, and simmer for 4 to 5 minutes more. Taste and adjust the seasoning.
- Finish with chopped coriander and serve immediately with steamed rice.
Tips
- Slitting the eggs allows a little of the sauce to cling to the surface and season them more thoroughly.
- If curry leaves are unavailable, a small strip of lime zest may be added at the end for brightness, though the flavour will be different.
- The sauce should remain smooth and spoonable; if it thickens too much, loosen it with a small splash of hot water before serving.
